Since it is the season for seville oranges, I usually prepare an orange syrup (I use to make a delicious juice) that all my guests expect and wait for in summer.
– wash oranges well
– squeeze the juice using an electric juicer
– strain juice into a glass container
– add one cup sugar to every one cup of juice
– mix well with a wooden spoon
– keep stiring this mixture until the sugar is completey dissolved , this might take a day or two
– the amount of time it takes depends on the amount of syrup you are preparing
– keep mixture covered with a net to prevent insects from landing into your pot
– when completely ready, pour into bottles
Essential tip:
To seal the bottles, and to give the syrup a more tangy flavor, add the zest of two oranges to the top of each bottle. Always remember to shake before use.
Now your syrup is ready to be stored in your pantry.
Serving the juice:
– for every 1 glass of water, add 1/4 cup of the prepared syrup, or mix as much syrup as you like with water; according to your prefered taste
– add a few ice cubes to each cup and serve
Another way to make use of the seville orange juice is:
– squeeze the juice and strain it
– do not add sugar
– pour the juice in separate glass jars
– place the jars in the freezer and freeze for later use
essential tip:
you can use the juice in several recipes, such as,
– baba ghannouj
– hommos
– samke 7arra (grilled fish)
– kibbe arnabiyyeh
you can do the same with lemon juice, it is the perfect time now since lemons are in season and at lowest prices.
